Northlake-based Function Coffee Co. has quickly earned a devoted following since first popping up at local markets this spring. Now, just about six months after starting their coffee-roasting passion project, owners Tony and Devin Daussat are planning their first brick-and-mortar location.
The Pecan Square couple has signed a lease on a space in Northlake Commons along FM 407, setting up shop in the suite formerly occupied by Pharmacy Plus. They plan to open the shop in the spring of 2026.
The Daussats, who both grew up in the Grapevine/Southlake area, moved to Pecan Square about a year and a half ago. But the idea for Function Coffee Co. has been brewing for almost two decades.
Initially, Tony was pursuing an acting career in New York and Los Angeles and worked as a barista in between jobs. It was during those shifts that he started dreaming of a coffee shop of his own. Almost every year since then, he’s created a business plan and filled in spreadsheets, only to decide the timing wasn’t quite right.
That changed early this year when Devin encouraged Tony to try roasting and selling his own beans before diving straight into a full-service coffee operation.
“Coffee, to me, is about serving others,” says Tony. “It gives you the opportunity to help start someone’s day, and it’s amazing to be a part of that.”
In January, the couple invested in a cutting-edge coffee bean roaster and started testing out different settings to create the perfect lineup of ethically sourced, locally roasted coffee.
After three months of testing, the Daussats launched Function Coffee Co. with bags of grounds and beans at a market in Pecan Square. This summer, they expanded to selling cans of cold brew at local farmers markets, frequently drawing long lines of fans and regularly selling out of their product.
“The range of emotions have been anything from crippling fear to thinking that this is actually going to work,” says Tony.
If the feedback from customers is any indication, Tony and Devin have a reason to be confident. Over the last couple of months, it’s been clear that Function Coffee Co. has quickly become a local favorite.
“I was blown away,” said one farmers market patron. “Delicious is not a strong enough word to describe it. I will be ordering their roasted beans on the regular.”
“Once you taste coffee this fresh, you’ll never want to go back to store-bought beans,” said a Pecan Square resident who ordered a bag of coffee online.
And the Daussats aren’t taking this boost from their neighbors for granted. Both of their parents started businesses during the early days of suburban growth in their own communities, so they’ve seen firsthand how rewarding it can be to build something in an up-and-coming area.
“We want to be a part of the same kind of thing that our parents saw in Grapevine and Southlake back in the day,” says Tony. “And the support we’ve already gotten from our community is everything. It’s incredible.”
Tony and Devin continue to run the business as a true team. Devin takes charge of the “people experience,” making connections with everyone from neighbors to vendors to contractors, while Tony manages the “coffee experience,” ensuring perfection in every pour.
But the pair work together to put their values at the forefront of the operation.
“Coffee really is just the vehicle,” says Tony. “We really want to build community through unrelenting, absurd hospitality.”
Absurd may be the only way to describe the whirlwind of going from roasting novice to coffee shop owner in about six months. Tony says taking a risk like this is terrifying, but he’s okay with that fear. And if he ever feels doubtful, he can always think back to what his nine-year-old son said when Tony asked what he thought about the family opening a coffee shop.
“You should just do it, bro. You’ve been talking about it forever.”
